 1 WEEK COOKlNG COURSE
The courses are run by an academic expert in the food of the region, aided by a master chef.
Each course run over a week's stay at the hotel and includes five practical sessions. The practical sessions are always preceded by a 45-minute lecture covering the local produce and culinary techniques to be used in the subsequent pratical session, with historical notes about the food where appropriate. The practical session in the loboratory lasts for approximately 2 hours. It covers the creation of a complete meal from the "antipasto" to the dessert and concludes with the preparation, including the recipe, of the famous "limoncello". Each dish is offered for tasting to the course participants during the practical lesson. The lessons are held in the afternoon from 15.30. During the mornings, course participants visit towns of the Amalfi coast and enjoy their cultural attractions. Visits are also arranged to a commercial wine cellar, a liqueur factory, a dairy where it is possible to see the production of "mozzarella" cheese, and a visit to a fish market learning how to recognize which types of fresh fish are used in the various cooking techniques.
