LAZIO : HOME-COOKING IN A COUNTRY ESTATE Cod. ECC19 - TUSCANIA / VITERBO

 THE REAL EVERY-DAY ITALIAN COOKING
On the first day, arrival at the House for dinner. After dinner night tour of Tuscania with stop for caffè and gelati. 
In the morning of the second day, shopping in town to see the market and choose food. Cooking lesson followed by lunch. After lunch a short walk around the estate to see the private Etruscan necropolis, through the meadows and through the olives grove. During the walk, gathering of wild herbs, fruits and vegetables in season. Another cooking lesson followed by dinner. 
After dinner a short talk about the history and tradition of Italian cooking: from the Etruscans and Romans to nowadays. What has changed and what has not.
On the third day, visit to the Isola Bisentina (a beautiful private island with architecture from XVI century) and its garden. Lunch by the lakeside in a typical "trattoria". Afternoon: a three-hour cooking lesson followed by dinner. After dinner, a talk about local dishes and traditions.
During the fourth day, morning tour of Tuscania to visit the two Romanesque Basilicas and the archaeological Museum. Food shopping. Lunch at the House including tasting local cheeses, hams, sausages and particularly "ricotta".
Afternoon: the dinner-cooking lesson. Dinner with a talk about wine and olive oil.
Fifth day morning dedicated to the visit to the thermal spa of the Terme dei Papi, to swim in the wonderful pool where once the Romans and the Popes used to bathe. On to Viterbo, via an ancient Etruscan road carved in the tufa rock, and to its medieval town centre. Lunch in a typical restaurant. 
Afternoon: a three-hour cooking lesson followed by dinner.
On the sixth day, shopping in an outdoor food market during the morning. Quick cooking lesson followed by lunch. After lunch, two-hour cooking lesson preparing preserves to take home, in late afternoon, trip to Tarquinia and dinner at the seaside at a fish restaurant. Way back, via a marvelous ice-cream maker in Tuscania to enjoy the ice-cream. 
On the seventh day, morning dedicated to recipe gathering. Farewell lunch. In the afternoon, departure. 
HISTORY AND DESCRIPTION OF THE ESTATE
Tuscania is one of the oldest towns of Italy, cradle of the Etruscan civilization. Its history starts from the Villanovian Period (900 - 700 b.C.), running through all the next periods till the Romans and the Middle Age. 
Hidden beneath the hills of the domain there are ruins of every era,in fact etruscan people considered these hills so important to dig in it one of the biggest necropolis of Tuscania, with tombs dating from the VII century b.C. on, a particular waterduct from the V century b.C., a great number of roads and paths, and, probably, a temple. Moreover,some studies let us know for sure that the road that was the principal for Etruscans, it was restored and enlarged by Romans, which paved it and called it Via Clodia; later again, the texture of all the caves, the roads and paths, the waterduct and all the rest, made out a perfect site to live on. The big family house of the Estate, with the dining room, the sitting room, the fireplace always lit in winter, and the big kitchen, is set in hectares of quiet, natural landscape facing the valley. Attached to the main house there are the six delightful, comfortable rooms and all the facilities and terrace, all plunged in a friendly family environment, that gives The opportunity to relax, enjoy culture, food and sport, and spend a pleasant holiday.
