TUSCAN MAREMMA : COOKING IN A FARM cod. ACS03 - GROSSETO / SCANSANO

 3 DAYS COOKlNG SCHOOL
Cooking courses to discover the secrets of typical Tuscan dishes, led by the chef. Fresh pasta, typical soups like acquacotta, meat and desserts prepared by the participants themselves.
The programme provides three half-day cooking lessons: Monday, Wednesday and Friday. Each lesson will focus on a different aspect.
The first lesson concerns first courses: soups, the art of making "pasta", sauces and presentation. The lesson takes about 3 hours.
On the second day the secrets of main courses will be revealed: meat flavoured with rosemary, the art of preparing and serving more sophisticated dishes like fish, roasted or casseroled chicken, pork, lamb and rabbit, with a look at presentation. The lesson takes about 3 hours.
The third lesson focuses on sweets. Using our modern kitchen facilities, typical sweet dishes like "Tozzetti" (biscuits with nuts), jam tarts will be prepared. During the lessons are recommend balsamic vinegar, raspberry and bilberry flavoured vinegar, olive oil, mushrooms and truffles. At lunchtime on Friday all the participants in the course will be invited to taste the white and red wines directly produced by the farm.
DESCRIPTION OF THE FARM
It is an elegant and sophisticated hotel-restaurant which emerged from the restoration of an ancient Maremma farm a short way from the old village of Scansano, immersed in the lush Tuscan countryside. The hotel has rooms and flats. 
The rooms All are tastefully furnished and comfortable: ensuite bathroom, refrigerator/bar, complimentary toiletries, hairdryer, telephone, satellite TV, air-conditioning, balcony. 4 suites with double bedroom, living-room with balcony, fireplace and jacuzzi bath.
The restaurant It has a spacious terrace where guests can dine outside in spring and summer, and enjoy the splendid Maremma countryside. For a quick lunch, the Taverna il Cavallino serves snacks, bruschetta, salads and hot dishes, and offers tastings of Morellino di Scansano. The owner of the property since 1989 decided to make this a family-run business with typical, traditional cuisine. Homemade pasta, rolled out in the traditional way by local women, and typical soups like acquacotta are served as first courses, while second courses include grilled meat, wild boar, rabbit and sucking pig. For vegetarians, the menu always includes grilled vegetables, flans and cheeses. The sweets are all homemade.
Facilities The 23 hectare property includes: a swimming pool (15 x 7,5 m) with a large garden; woodlands with footpaths for walking; a well-equipped stable-yard with qualified instructors, where guests can choose to ride out or take lessons in the riding school. For sports enthusiasts, the Maremmello Golf Club is a 30-minute drive away and the Punta Ala Club is an hour away on the coast.
